I do not scale mine
I just cut them off , coat them in fishcrisp and fry them up to a golden crisp.
the fins are like potato chips

I have never done it. I can't wait to give it a try. Thanks, I watched a youtube video and they scaled.

Unless I’m cutting them out wrong be careful of the bones, but they are good!  Especially the fins.

The meat off of the wings is way better than the cheeks.

I would take the wings anytime.
Chris, you will kick yourself in the butt for not doing this earlier

I normally like to sauté/pan fry my walleye in a cast pan with some EVO & Butter and not deep fry it. Anyone pan frying or grilling the wings? I guess I could bring enough oil to camp to deep fry them in a CI pan.

I do them in a pan! I cut them in half with my small shears, that way they lay flatter in the frying pan. There delish!!!
